Zucchini with Pork in Roasted Salsa Recipe

Ingredients

  • 1 tablespoon Mazola® Corn Oil
  • 4 pounds pork
  • 1 medium sized onion
  • 3-4 crushed Roma tomatoes
  • 3 garlic cloves
  • 5 zucchini
  • Bite-sized pieces of roasted corn
  • Panela cheese
  • 1 bunch of cilantro
  • For the salsa:,
  • Roma tomatoes
  • ¼ onion
  • 3 garlic cloves
  • 4-5 serranos, or fewer, if you don’t want it spicy

Instructions

  1. Step 1) Add oil to a pan and add your chopped pork in batches, seasoning with salt and pepper.
  2. Step 2) Once all pork is browned on both sides add back to pan and add tomatoes, onion, salsa (see note below), and a splash of water.
  3. Step 3) Cover and cook on medium to low heat until meat is tender.
  4. Step 4) Once meat is tender add the zucchini and cook until tender.
  5. Step 5) Lastly, remove from heat and add roasted corn on the cob, diced Panela cheese and chopped cilantro.

  6. For the Salsa:
  7. Roast all ingredients until lightly charred and tomatoes are very soft. Blend with salt and a splash of water until smooth.
