Chaufa Brown Rice Recipe

Ingredients

  • Rice,
  • 2 cups boneless skinless chicken thighs, diced into ½-inch cubes (or chicken breast)
  • 5 eggs, scrambled and then roughly chopped
  • 2-½ cups cooked brown rice, cooled
  • ½ cup onions, diced small
  • 2 garlic cloves, minced
  • 1 whole red bell pepper, diced
  • ½ cup thinly sliced green onions (plus the white parts)
  • Salt and pepper for taste
  • 3 tablespoons Mazola® Corn Oil

  • Sauce Mix,
  • ⅛ cup soy sauce
  • ¼ teaspoon Mazola® Corn Oil
  • 2 pinches cumin
  • ¼ teaspoon ground ginger (only add it if you are not using fresh ginger; if using fresh, use 1 tablespoon and cook it with the fresh veggies)
  • Sesame seeds
  • 1 pinch of sugar

Instructions

  1. Step 1) Heat the Mazola® Corn Oil in a large skillet over medium high heat. Add the red bell peppers and onions. Sautée until softened, about 6 minutes.
  2. Step 2) Right before the peppers and onions are done, add the fresh ginger (if using fresh ginger), green onions, and sautée for a minute.
  3. Step3 ) Add the chicken and carefully mix well and cook for a few additional minutes, or until cooked through.
  4. Step 4) Add half the rice.
  5. Step 5) Mix well, then add the remaining rice. Mix well.
  6. Step 6) Add the soy sauce mixture, mix well, then add the chopped scrambled eggs.
  7. Step 7) Toss and season with salt/pepper.
