Grape Tomato and Fresh Basil Pesto Caprese Salad

Ingredients

  • Pesto:
  • 2 cups fresh basil leaves, tightly packed
  • 1/2 cup Mazola® Corn Oil
  • 1/3 cup pine nuts
  • 1/3 cup grated Parmesan cheese
  • 4 cloves fresh garlic
  • Salt and pepper, to taste
  • Salad
  • 10 ounces (about 2 cups ) fresh grape tomatoes, halved
  • 1 package (8 ounces) fresh mozzarella, drained and cubed
  • 3/4 cup Kalamata olives, pitted
  • Fresh basil leaves, for garnish

Instructions

  1. Puree pesto ingredients in blender or food processor.
  2. Combine tomatoes, mozzarella cheese and olives in a serving bowl. Stir in pesto.
  3. Garnish with fresh basil and serve immediately.
