Seafood Quesadillas

Ingredients

  • 1 package (3 ounces) cream cheese, softened
  • 1/4 cup sour cream
  • 2 tablespoons Mazola® Corn Oil
  • 1 cup thinly sliced zucchini
  • 1 cup sliced fresh mushrooms
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet basil
  • 1/2 teaspoon Beau Monde Seasoning
  • 1/4 teaspoon black fine grind pepper
  • 2 cans (4 ounces each) medium shrimp, drained
  • 1 can (6 ounces) crab meat, drained
  • 10 (6-inch) flour tortillas
  • 3/4 cup shredded smoked gouda cheese

Instructions

  1. Combine cream cheese and sour cream in a small bowl. Set aside.
  2. Heat oil in large skillet over medium heat. Add zucchini, mushrooms, garlic powder, basil, Beau Monde seasoning and pepper; stir-fry until tender, about 4 to 5 minutes. Add shrimp and crab; heat through.
  3. To assemble:
  4. Spread 5 tortillas with an equal amount of the cream cheese mixture (about 1-1/2 tablespoons per tortilla). Top each with 1/2 cup stir-fry, then sprinkle with 2 tablespoons Gouda. Lightly press a tortilla on top.
  5. Place skillet over high heat. Transfer 1 quesadilla to the skillet, and cook for 1 to 2 minutes on each side. Repeat with the remaining quesadillas. Serve hot.
