Ingredients
Dry Ingredients
- ½ teaspoon of nutmeg
- ½ teaspoon of cinnamon
- 1½ cups of brown sugar
- 2 cups of pumpkin puree
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 2 cups of flour
- Pumpkin seeds (optional)
Wet Ingredients
- ⅔ cups of Mazola® Corn Oil
- 3.4 ounces of low-fat vanilla pudding
- 1 teaspoon of vanilla
- 4 eggs
Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix all dry ingredients. Once mixed, combine with all wet ingredients.
- Add mixture to loaf pan and top off with pumpkin seeds (optional).
- Bake in oven on 350°F for 45 minutes.
- Let cool, then enjoy!
