Pumpkin Bread

Ingredients

Dry Ingredients
  • ½ teaspoon of nutmeg
  • ½ teaspoon of cinnamon
  • 1½ cups of brown sugar
  • 2 cups of pumpkin puree
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 2 cups of flour
  • Pumpkin seeds (optional)
Wet Ingredients
  • ⅔ cups of Mazola® Corn Oil
  • 3.4 ounces of low-fat vanilla pudding
  • 1 teaspoon of vanilla
  • 4 eggs

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix all dry ingredients. Once mixed, combine with all wet ingredients.
  3. Add mixture to loaf pan and top off with pumpkin seeds (optional).
  4. Bake in oven on 350°F for 45 minutes.
  5. Let cool, then enjoy!
