Ingredients
- 4–5 pounds of pork loin
- ½ cup of lime juice
- 2 garlic cloves
- 3 tablespoons of Mazola® Corn Oil
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of thyme
- 1 tablespoon of oregano
- 2 teaspoons of salt
- 1 teaspoon of pepper
- 1 onion, sliced
- 1 jalapeno, sliced
- ½ bunch of cilantro, chopped
Instructions
- Step 1) Mix in the marinade ingredients with the pork.
- Step 2) Coat well and keep in the fridge for 1 hour at minimum—overnight is best.
- Step 3) Remove from the fridge and heat the grill.
- Step 4) Grill on both sides for 3–4 minutes.
- Step 5) Set aside and cover until ready to serve.
- To serve, slice pork into thin slices.
- Serve on warm flour tortillas with salt, jalapeños, cilantro, jocoque (or sour cream), salsa and lime juice.
