Ingredients
- 1 pound (2 cups) dried black red OR pinto beans
- 1/4 cup Mazola® Corn Oil
- 2 tablespoons minced salt pork OR bacon
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4-1/2 cups water
- 3 tablespoons chicken flavor bouillon powder
- Garnishes
- Chopped onion
- Diced tomato
- Crumbled queso fresco cheese
- Diced serrano chile pepper
- Chopped fresh cilantro
- Fresh lime wedges
Instructions
- Step 1) Wash beans and place in a large saucepan; cover with 4 to 6 cups water. Cover pan and bring to a boil over medium-high heat; boil 2 minutes. Remove from heat and let stand for 1 hour. Or soak beans at room temperature over night. Drain cooked beans and set aside.
- Step 2) Heat oil in a large, heavy saucepan or Dutch oven over medium-high heat. Add salt pork and cook for 2 minutes. Stir in onion and garlic; continue cooking for 2 to 3 minutes or until onions become translucent and tender. Add beans, water and bouillon powder. Bring to a boil. Reduce heat to very low; cover. Cook for 3 to 4 hours, stirring occasionally until beans are tender.
- Step 3) Garnish each serving with onion, tomatoes, cheese, serrano pepper, cilantro and a squeeze of lime.
