Festive Red Snapper with Almond Glaze and Fresh Mango Recipe

Ingredients

  • 1/2 cup flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 4 fillets red snapper
  • 3 tablespoons butter
  • 3 tablespoons Mazola® Corn Oil
  • 1/3 cup sliced almonds
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped fresh cilantro
  • 1 cup chopped fresh mango
  • 1/8 teaspoon chipotle chile

Instructions

  1. Step 1) Combine flour, cinnamon, ginger and salt in a shallow bowl. Dredge all sides of snapper fillets in flour mixture.
  2. Step 2) Heat butter and corn oil in a large skillet on medium heat. Add fillets and pan fry until fish flakes with a fork, turning once. Transfer fish to a plate; cover to keep warm.
  3. Step 3) Reduce heat to medium-low and add almonds; cook about 5 minutes, until almonds caramelize (nuts will be lightly browned). Stir in lime juice, brown sugar, cinnamon and nutmeg and continue cooking about 3 to 5 minutes to reduce to a syrup consistency.
  4. Step 4) Combine cilantro and mango in a small bowl; sprinkle with chipotle.
  5. Step 5) To serve, top each fillet with an equal amount of caramelized almonds and mangoes.
