Ingredients
- 1/2 cup flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 4 fillets red snapper
- 3 tablespoons butter
- 3 tablespoons Mazola® Corn Oil
- 1/3 cup sliced almonds
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped fresh cilantro
- 1 cup chopped fresh mango
- 1/8 teaspoon chipotle chile
Instructions
- Step 1) Combine flour, cinnamon, ginger and salt in a shallow bowl. Dredge all sides of snapper fillets in flour mixture.
- Step 2) Heat butter and corn oil in a large skillet on medium heat. Add fillets and pan fry until fish flakes with a fork, turning once. Transfer fish to a plate; cover to keep warm.
- Step 3) Reduce heat to medium-low and add almonds; cook about 5 minutes, until almonds caramelize (nuts will be lightly browned). Stir in lime juice, brown sugar, cinnamon and nutmeg and continue cooking about 3 to 5 minutes to reduce to a syrup consistency.
- Step 4) Combine cilantro and mango in a small bowl; sprinkle with chipotle.
- Step 5) To serve, top each fillet with an equal amount of caramelized almonds and mangoes.
