Tilapia Fish with Sautéed Veggies

Ingredients
- 1 pound tilapia fillets
- 2 tablespoons Mazola® Corn Oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon lemon pepper
- 1 zucchini, sliced into rounds
- 1 yellow squash, sliced into rounds
- 2 cups cauliflower
- 2 cups broccoli
- 2 garlic cloves, chopped
- ¼ cup water
- 1 tablespoon soy sauce
- ½ teaspoon red pepper flakes
Instructions
- Mix together garlic powder, onion powder, black pepper, paprika and lemon pepper into a small bowl.
- Brush your tilapia fillets with Mazola® Corn Oil on both sides.
- Sprinkle about 4 teaspoons of the seasoning mixture generously on both sides of your fillets.
- Add 1 tablespoon Mazola® Corn Oil to a hot pan.
- Place your fish in the pan and cook for 4–5 minutes on each side, depending on thickness.
- Remove fish from pan and set aside.
- Add splash of Mazola® Corn Oil to a pan and add vegetables.
- Season with remaining seasonings mix and add chopped garlic.
- Mix and cook until garlic is fragrant, about 30 seconds.
- Then add ¼ cup of water, 1 tablespoon of soy sauce and a pinch of red pepper flakes.
- Cook until vegetables are tender, about 3–5 minutes.
- Plate the fish with the vegetables and enjoy!
