Mango and Ginger Glazed Pork Chops Recipe

Ingredients
- 1/2 cup mango OR apricot jam
- 2 tablespoons Dijon mustard
- 2 tablespoons orange juice
- 4 tablespoons Mazola® Corn Oil
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon grated peeled fresh ginger
- 1 garlic clove, minced
- 4 bone-in center-cut pork loin chops, 1/2-inch thick
- 3/4 teaspoon Jamaican jerk seasoning
- 1 ripe mango, peeled
Instructions
- Step 1) Whisk together the jam, mustard, orange juice, 2 tablespoons of oil, soy sauce, ginger and garlic in a small bowl.
- Step 2) Sprinkle pork with the jerk seasoning. Heat the remaining 2 tablespoons of oil in a large non-stick skillet over medium-high heat.
- Step 3) Add the chops and cook until browned and cooked through, about 5 minutes per side; transfer to a platter.
- Step 4) Add the mango mixture and mango slices to the skillet and bring to a boil.
- Step 5) Reduce heat and simmer, uncovered, until the sauce thickens slightly, about 3 minutes.
- Step 6) Spoon the sauce over the chops.
