Ingredients
- Pork
- 1/2 cup finely chopped red onion
- 1/4 cup chopped seeded jalapeno peppers
- 1/2 cup lime juice
- 2 tablespoons Mazola® Corn Oil
- 2 tablespoons smokey mesquite
- 2 small OR 1 large pork tenderloin
- Avocado Salsa
- 1 medium ripe avocado, peeled and chopped
- 1 plum tomato, seeded and chopped
- 1/2 cup peeled, seeded and chopped cucumber
- 1 green onion, chopped
- 1 tablespoon minced fresh cilantro
- 2 tablespoons honey
- Sea salt grinder
- Black whole grinder pepper
Instructions
- Step 1) Combine onions, jalapeno peppers, lime juice, oil and smokey mesquite seasoning in a resealable bag; add pork. Refrigerate for up to two hours.
- Step 2) Combine salsa ingredients, seasoning to taste with salt and pepper. Cover and refrigerate until serving.
- Step 3) Remove pork from marinade; discard marinade. Grill pork over Direct Medium heat for about 15 minutes, until internal temperature is at least 150°F. Remove to platter and allow to rest at least 10 minutes. Cut into slices and serve with Avocado Salsa.
