Pollo con Calabacitas

Ingredients

  • 2 chicken breasts, cubed
  • 3 tablespoons Mazola® Corn Oil
  • 2 calabacitas (zucchini), cubed
  • 3 Roma tomatoes, chopped
  • 1/2 onion, chopped
  • 2 serrano peppers, chopped
  • 8 ounces corn
  • 1 garlic clove, whole
  • 4 ounces tomato sauce
  • 1 tablespoon chicken bouillon

Instructions

  1. Cut chicken breast into small cubes.
  2. In a pan over low/medium heat, heat Heart-Healthy* Mazola® Corn Oil, add the chicken and let it cook covered for 15 minutes.
  3. Meanwhile, chop onion, serranos, and 2 tomatoes into small pieces.
  4. Once the chicken is fully cooked, add the chopped onion, serranos, and tomatoes, mix and let cook for 2 minutes.
  5. In a blender add 1 tomato, garlic, tomato sauce, chicken bouillon and 1/2 cup of water, blend well.
  6. Add the sauce to the pan and mix.
  7. While it comes to a boil, chop the calabacitas into small cubes, once it boils add them to the pan along with the corn.
  8. Let it cook covered for 12 minutes on low heat or until the calabacitas are soft. And enjoy!
