Pollo con Calabacitas

Ingredients
- 2 chicken breasts, cubed
- 3 tablespoons Mazola® Corn Oil
- 2 calabacitas (zucchini), cubed
- 3 Roma tomatoes, chopped
- 1/2 onion, chopped
- 2 serrano peppers, chopped
- 8 ounces corn
- 1 garlic clove, whole
- 4 ounces tomato sauce
- 1 tablespoon chicken bouillon
Instructions
- Cut chicken breast into small cubes.
- In a pan over low/medium heat, heat Heart-Healthy* Mazola® Corn Oil, add the chicken and let it cook covered for 15 minutes.
- Meanwhile, chop onion, serranos, and 2 tomatoes into small pieces.
- Once the chicken is fully cooked, add the chopped onion, serranos, and tomatoes, mix and let cook for 2 minutes.
- In a blender add 1 tomato, garlic, tomato sauce, chicken bouillon and 1/2 cup of water, blend well.
- Add the sauce to the pan and mix.
- While it comes to a boil, chop the calabacitas into small cubes, once it boils add them to the pan along with the corn.
- Let it cook covered for 12 minutes on low heat or until the calabacitas are soft. And enjoy!
