Ingredients
- 1 slice rye bread, slightly toasted
- 1 whole avocado, mashed
- 1 teaspoon cilantro, fresh
- 1/2 teaspoon lemon juice
- 1 whole tomato, fresh
- 1 whole red onion, peeled
- 2 each radishes, rinsed and sliced
- 1 whole egg, large
- 1/2 tablespoon Mazola® Corn Oil
Instructions
- Step 1) In a small bowl mix the mashed avocado with lemon juice and cilantro.
- Step 2) Heat a small skillet over medium heat, add oil heat for 1 minute, add egg and cook and cook until done as desired.
- Step 3) Spread the avocado mixture on the toasted bread, sprinkle with tomatoes, radish and onion. Add your egg, season with salt and pepper.
