Avocado Toast with Egg
- 1 slice rye bread slightly toasted
- 1 whole avocado mashed
- 1 teaspoon Cilantro fresh
- 1/2 teaspoon lemon juice
- 1 whole tomato fresh
- 1 whole red onion peeled
- 2 each radishes rinsed and sliced
- 1 whole egg large
- 1/2 tablespoon Mazola® Corn Oil
in a small bowl mix the mashed avocado with lemon juice and cilantro.
Heat a small skillet over medium heat, add oil heat for 1 minute, add egg and cook and cook until done as desired.
Spread the avocado mixture on the toasted bread, sprinkle with tomatoes, radish and onion. Add your egg, season with salt and pepper.
