Ingredients
To make the sauce:
- 2 tomatoes
- ½ onion
- 1 garlic
- 1 teaspoon salt
- 4 cups water (to cook tomatoes)
- 2 cups water (to blend the sauce)
To cook the turkey:
- 2 tablespoons Mazola® Corn Oil
- 1 pound ground turkey
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon ground cumin
- ½ teaspoon ground oregano
- ¼ onion, diced
- 1 garlic clove, finely minced
- 1 jalapeno, finely minced
- 1 large potato (or 2 small potatoes), peeled and diced
Instructions
To make the sauce:
- Step 1) Add tomatoes, ½ onion, and garlic in a stock pot. Cover with 4 cups of water. Cook for 7–8 minutes, or until tomatoes are soft. Discard water.
- Step 2) Place tomatoes, onion, garlic, and 1 teaspoon salt in a blender. Add 2 cups of water. Blend until smooth. Set aside until ready to use.
To cook the turkey:
- Step 1) Heat Mazola® Corn Oil in a large skillet. Add the ground turkey. Season with salt, pepper, cumin, and oregano. Break it up with your spatula. Cook for 4–5 minutes.
- Step 2) Add the onion, garlic, jalapeno, and potato. Stir and cook for 2–3 minutes.
- Step 3) Add the tomato sauce. Stir to combine.
- Step 4) Reduce heat to medium-low. Cover and cook until the potatoes are fork-tender (about 10 minutes). Add ½ cup water, if needed.
- Serve and enjoy.
