Easy Pork Pozole Recipe

Ingredients

  • 12 ounces pork loin, cut into 1/2-inch cubes
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons Mazola® Corn Oil
  • 1-1/2 cups chopped onion
  • 4 cloves garlic, minced
  • 1 can (15.5 ounces) white hominy, rinsed and drained
  • 2 cups salsa verde
  • 1 cup water
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Chopped cilantro, cojita cheese
  • Corn tortillas, optional

Instructions

  1. Step 1) Toss pork cubes with pepper. Heat 1-1/2 tablespoons oil in stock pot over medium-high heat. Sauté pork until just starting to brown; about 3 to 5 minutes. Push pork to the sides of the pot and add remaining 1-1/2 tablespoons oil. Add onion and garlic; cook an additional 3 to 5 minutes until onions soften. Stir frequently.
  2. Step 2) Add hominy, salsa verde, water, cumin and oregano to pot; stir to combine. Bring to a boil; reduce heat to a simmer 15 minutes. Add additional water if mixture seems too thick.
  3. Step 3) Serve in bowls topped with cilantro, cojita cheese, radishes and crema, if desired.
