Ingredients
- 12 ounces pork loin, cut into 1/2-inch cubes
- 1/4 teaspoon ground black pepper
- 3 tablespoons Mazola® Corn Oil
- 1-1/2 cups chopped onion
- 4 cloves garlic, minced
- 1 can (15.5 ounces) white hominy, rinsed and drained
- 2 cups salsa verde
- 1 cup water
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- Chopped cilantro, cojita cheese
- Corn tortillas, optional
Instructions
- Step 1) Toss pork cubes with pepper. Heat 1-1/2 tablespoons oil in stock pot over medium-high heat. Sauté pork until just starting to brown; about 3 to 5 minutes. Push pork to the sides of the pot and add remaining 1-1/2 tablespoons oil. Add onion and garlic; cook an additional 3 to 5 minutes until onions soften. Stir frequently.
- Step 2) Add hominy, salsa verde, water, cumin and oregano to pot; stir to combine. Bring to a boil; reduce heat to a simmer 15 minutes. Add additional water if mixture seems too thick.
- Step 3) Serve in bowls topped with cilantro, cojita cheese, radishes and crema, if desired.
