Goat Cheese Bruschetta Recipe

Ingredients
- 1/4 cup Mazola® Corn Oil
- 2 teaspoons fresh minced garlic
- 1 baguette, halved lengthwise
- 4 ounces goat cheese, softened
- 4 medium Roma tomatoes, thinly sliced
- 1/2 teaspoon sea salt
- 1/2 teaspoon black medium grind pepper
- 1/4 cup fresh thinly-sliced basil
- 1 cup (4 ounces) shredded mozzarella cheese
Instructions
- Step 1) Position oven rack in upper third of oven. Heat oven to 450°F.
- Step 2) Combine corn oil and garlic. Place baguette cut-side-up on a baking sheet. Brush oil mixture onto cut surface of each baguette.
- Step 3) Spread goat cheese evenly onto each bread surface, using a spatula. Distribute tomato slices over goat cheese. Sprinkle with salt and pepper, then top with basil and shredded cheese.
- Step 4) Bake bruschetta for 5 to 7 minutes or until cheese melts and bread browns at edges.
- Remove from oven; cool slightly and transfer to a cutting board. Using a serrated knife and sawing motion, slice diagonally into serving pieces.
- RECIPE TIPS: Bruschetta is also delicious cooked on a medium-hot outdoor grill. Use foil to ease transfer.
