Step 1) Position oven rack in upper third of oven. Heat oven to 450°F.
Step 2) Combine corn oil and garlic. Place baguette cut-side-up on a baking sheet. Brush oil mixture onto cut surface of each baguette.
Step 3) Spread goat cheese evenly onto each bread surface, using a spatula. Distribute tomato slices over goat cheese. Sprinkle with salt and pepper, then top with basil and shredded cheese.
Step 4) Bake bruschetta for 5 to 7 minutes or until cheese melts and bread browns at edges.
Remove from oven; cool slightly and transfer to a cutting board. Using a serrated knife and sawing motion, slice diagonally into serving pieces.
RECIPE TIPS: Bruschetta is also delicious cooked on a medium-hot outdoor grill. Use foil to ease transfer.
