Mushroom Almond Rice Pilaf Recipe

Ingredients

  • 2 tablespoons Mazola® Corn Oil
  • 1-1/2 cups sliced mushrooms
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup uncooked white basmati rice
  • 1-1/2 cups chicken OR vegetable broth
  • 1/3 cup toasted slivered almonds
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Step 1) Heat oil in a 2-1/2 to 3-quart saucepan over medium heat. Add mushrooms, onion and garlic; cook until tender, about 3 minutes. Stir in rice. Cook, stirring, 2 minutes.
  2. Step 2) Add broth. Bring to a boil. Reduce heat to low; cover, and simmer 20 minutes. Remove from heat (do not stir rice). Let stand 10 minutes.
  3. Step 3) Stir in almonds and parsley; serve immediately.
