Picadillo Tacos with Red Salsa

Ingredients
For Tacos:
- 1 teaspoon Mazola® Corn Oil
- 1 pound lean ground beef
- 1 tablespoon beef seasoning
- ⅓ white onion, chopped
- 1 potato, cubed
- 1 carrot, cubed
- 1 cup, water
- Handful of cilantro, roughly chopped
For Salsa:
- 3 Roma tomatoes
- 5 chile rojo
- 2 garlic cloves
- 1 teaspoon oregano
Instructions
- Add Mazola® Corn Oil to hot pan, then add ground beef and beef seasoning.
- Cook until beef starts to brown, 4–5 minutes.
- Then add chopped onion and vegetables.
- Add water and chopped cilantro and let simmer until veggies get tender, about 5–10 minutes.
- For salsa, boil tomatoes and chiles then add to a blender and blend with garlic cloves.
- Add 1 teaspoon of Mazola® Corn Oil to hot pan, add salsa and sauté salsa until it thickens, about 3–5 minutes.
- Sprinkle oregano on top.
- Heat up tortillas and add picadillo, then top off with your choice of toppings.
