Grilled Jerk Pork with Cherry Glaze Recipe

Ingredients

  • 1/4 cup Mazola® Corn Oil
  • 1/4 cup orange juice
  • 2 tablespoons cherry preserves
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Jamaican jerk seasoning
  • 2 small OR 1 large pork tenderloin
  • Cherry Glaze
  • 1/2 cup cherry preserves
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon Jamaican jerk seasoning
  • 2 tablespoons minced fresh cilantro

Instructions

  1. Step 1) Combine oil, orange juice, cherry preserves, red wine vinegar and seasoning in a 1-gallon resealable plastic bag; add pork. Refrigerate to marinate for at least 30 minutes.
  2. Step 2) Combine glaze ingredients in a small bowl.
  3. Step 3) Remove pork from marinade; discard marinade. Grill pork over direct medium heat for 15 to 20 minutes, until internal temperature is at least 150°F. Brush with a few tablespoons of glaze the last 2 to 3 minutes of grilling. Remove pork to platter and allow to rest at least 10 minutes. Cut into slices and serve with remaining Cherry Glaze.
