Ingredients
- 2 tablespoons Mazola® Corn Oil
- 4 pork chops, seasoned with salt and pepper
- 1 medium onion, finely chopped
- 1 large garlic clove, minced
- 2 can ned chipotle chiles en adobo, seeds removed
- 1 cup canned mango nectar
- Juice of 1 fresh lime
- Chopped fresh cilantro for garnish
Instructions
- Step 1) Heat oil in a large skillet over medium high heat. Add pork chops and cook until golden brown, about 3 minutes per side. Remove from pan and keep warm.
- Step 2) Add onion and garlic to skillet; sauté until soft. Add chiles, mango nectar and lime juice. Cook about 5 to 10 minutes, stirring occasionally, until sauce reduces and begins to thicken. Return pork chops to skillet; cover, reduce heat and cook about 10 minutes longer until cooked through.
- Step 3) Serve with sauce spooned over chops and chopped cilantro sprinkled on top.
