Salmon with Avocado Pico de Gallo Recipe

Ingredients
For the Salmon
- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons of Mazola® Corn Oil
- ½ teaspoon of salt
- ¼ teaspoon of black pepper
- 2 garlic cloves, finely minced
- ½ teaspoon of ground oregano
- 1 medium lemon
For the Avocado Pico de Gallo
- 2 large avocados (or 4 medium avocados), diced
- 1 tomato, diced
- 1 jalapeno, finely diced
- ¼ red onion, finely diced
- 1 garlic clove, finely diced
- 1 teaspoon of salt
- Juice of 1 lime
- ½ bunch of cilantro, chopped
Instructions
- Step 1) Preheat the oven to 400°F and grease a large baking sheet. Arrange the salmon fillets on the baking sheet.
- Step 2) In a small bowl, stir together your Mazola® Corn Oil, salt, pepper, garlic, oregano, and juice of 1 lemon. Spoon over salmon fillets, being sure to rub all over the tops and sides of the salmon so it has no dry spots.
- Step 3) Thinly slice the remaining half of the lemon and top each piece of salmon with a slice of lemon.
- Step 4) Bake for 12–15 minutes until the salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1–2 minutes, if desired.
- Step 5) As the salmon is baking, mix all the avocado pico de gallo ingredients in a small bowl. Taste for salt. Adjust if needed.
- Step 6) Once the salmon is ready, serve the fish on a plate and spoon over with the avocado pico de gallo. Enjoy!
