Ground Turkey Stuffed Bell Peppers

Ingredients
- 1 tablespoon Mazola® Corn Oil
- 3 bell peppers, halved
- Salt, to taste
- Black pepper, to taste
- 16 ounces ground turkey
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1 tablespoon paprika
- 1/2 tablespoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3 Roma tomatos, chopped
- 2 chiles jalapeño, chopped
- 2 cups cooked white rice
- 40 ounces cooked black beans
- OPTIONAL 1/2 cup pico de gallo
Instructions
- To a baking dish, assemble your halved bell peppers, drizzle 1⁄2 tablespoon of Mazola® Corn Oil, salt and black pepper to taste.
- Bake at 375 degrees for 15 minutes.
- To a pan at medium-low heat, add in 1⁄2 tablespoon of Mazola® Corn Oil, 1⁄4 chopped onion, sauté for 2 minutes.
- Add in 16 ounces of ground turkey, cook for 15 minutes or until fully cooked.
- Add in 1 teaspoon of minced garlic, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of cayenne pepper, 1 tablespoon of paprika, 1⁄2 tablespoon of oregano, 1⁄2 teaspoon of garlic powder, 1⁄2 teaspoon of onion powder, mix well together.
- Add in 3 chopped Roma tomatoes, 2 chopped chiles jalapeño, mix.
- Add in 40 ounces of cooked black beans and 2 cups of cooked white rice, mix.
- Add the mixture into the bell peppers.
- Bake at 375 degrees for 15 minutes.
- You can enjoy as is or top it off with fresh pico de gallo!
