Ground Turkey Stuffed Bell Peppers

Ingredients

  • 1 tablespoon Mazola® Corn Oil
  • 3 bell peppers, halved
  • Salt, to taste
  • Black pepper, to taste
  • 16 ounces ground turkey
  • 1 teaspoon minced garlic
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon paprika
  • 1/2 tablespoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 Roma tomatos, chopped
  • 2 chiles jalapeño, chopped
  • 2 cups cooked white rice
  • 40 ounces cooked black beans
  • OPTIONAL 1/2 cup pico de gallo

Instructions

  1. To a baking dish, assemble your halved bell peppers, drizzle 1⁄2 tablespoon of Mazola® Corn Oil, salt and black pepper to taste.
  2. Bake at 375 degrees for 15 minutes.
  3. To a pan at medium-low heat, add in 1⁄2 tablespoon of Mazola® Corn Oil, 1⁄4 chopped onion, sauté for 2 minutes.
  4. Add in 16 ounces of ground turkey, cook for 15 minutes or until fully cooked.
  5. Add in 1 teaspoon of minced garlic, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of cayenne pepper, 1 tablespoon of paprika, 1⁄2 tablespoon of oregano, 1⁄2 teaspoon of garlic powder, 1⁄2 teaspoon of onion powder, mix well together.
  6. Add in 3 chopped Roma tomatoes, 2 chopped chiles jalapeño, mix.
  7. Add in 40 ounces of cooked black beans and 2 cups of cooked white rice, mix.
  8. Add the mixture into the bell peppers.
  9. Bake at 375 degrees for 15 minutes.
  10. You can enjoy as is or top it off with fresh pico de gallo!
