White Wine Herb Vegetable Skewers
Use your favorite combination of fresh vegetables from the farmer's market.

Prep Time: 15 minutes
Marinate Time: 10 to 15 minutes

Grill Time: 8 to 12 minutes

1 package white wine & herb marinade
1/3 cup water
1/4 cup white wine
2 teaspoons lemon juice
2 tablespoons Mazola® Corn Oil

2 small zucchini, cut into chunks
2 small summer squash, cut into chunks
1 small eggplant, halved lengthwise and cut into bite-size chunks
1 red and 1 yellow bell pepper, seeded and quartered
1 red onion, quartered, separated (use outer sections only)
As needed grill spray

Preheat grill to medium hot or 400°F.

Combine marinade mix, water, wine, lemon juice and oil in a resealable plastic bag; mix well. Add vegetables to bag with marinade turning to coat. Seal bag and set aside to marinate for 10 to 15 minutes, turning occasionally.

Coat grill surface with grill spray to prevent sticking. Remove vegetables from marinade; discard marinade. Alternate vegetables on skewers.  Cook over Direct Medium-high heat for 4 to 6 minutes per side or until browned grill marks appear. Transfer cooked vegetables to a serving plate and serve immediately.
