Step 1) Bring jelly, vinegar, brown sugar, ground chipotle and pasilla chilies to a boil in a heavy saucepan. Reduce heat and simmer 15 to17 minutes or until sauce is reduced to 2/3 cup.
Step 2) Slice pork loin into 4 equal portions (1 to 1-1/2 inches thick). Season with salt, pepper and garlic powder.
Step 3) Heat oil in a large skillet over medium-high heat; add pork and saute until interior reaches minimum temperature of 150°F; turning once.
Step 4) Baste or drizzle pork with chipotle glaze. Serve with mashed potatoes or seasoned plantains.
