Step 1) Add lemon juice to apples and toss. Melt butter in a large skillet over medium high heat. Add apples, brown sugar, 1-1/2 teaspoons cinnamon, nutmeg and salt. Stir until well mixed and cook for 5 minutes, or until bubbly. Combine apple juice and corn starch in a small bowl; add to pan. Reduce heat to low, cover and simmer until apples are tender, 6 to 8 minutes. Remove apples from heat and chill for at least 2 hours.
